Snow Day Joys

Nothing like relaxing on the couch watching the snow fall. Especially when it's probably the most snow we've had all year combined. I'm definitely a summer girl, but every once in a while, I enjoy watching the snow fall so gently to the ground.

So today, I took some time to soak it in with pure "snow day" essentials.

Also, as I am a warm-weathered gal, I did take a few moments to enjoy my flowers that are thriving so well indoors. Gotta love the pink! (And the reminder that spring is right around the corner. Hopefully...)

And for one last look for the day, here was my view from the living room window late this afternoon. It has continued snowing so I will have to take another picture of tomorrow's final snowfall.

Sunday Brunch

Oh my, do I have a Sunday brunch treat to share today!

For those of you who know me, you know that I have an unapologetic love for pancakes. They are my favorite thing to make on the weekends while catching up on the news and relaxing in my PJs. Perfect with a nice, warm cup of coffee. Wish I could spend every morning of the week that way!

Anyway, my love for pancakes has sent me on a search for a healthy, guilt-free version that doesn't exchange taste for healthfulness. And today I think I found the golden ticket! This recipe was discovered through Pinterest and I have fallen in love with this blog: skinnytaste.com. The author bases all of her recipes on weight watchers points so it's nice to see some healthy options that can fit into every day life.

So, on to the recipe:

Whole Wheat Pancakes


You will need:
  • 2 cups whole wheat flour 
  • 4 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp sugar
  • 2 large eggs
  • 2 cups + 2 tbsp fat free milk
  • 2 tsp vanilla

Now mix all of the dry ingredients together, then add the wet ingredients. Mix well until there are no more dry clumps. Heat a large skillet over medium heat and spray with cooking spray. (I actually used my large griddle on the counter top so that I could cook more at a time). Pour 1/4 cup of batter onto the heated surface. When the pancakes start to bubble, you may add fruit if you wish. I had a half a carton of blueberries in the fridge that needed to be cleaned up so this seemed like the perfect way to do so.

When the bubbles settle and edges begin to set, flip the pancakes. Repeat with the remainder of the batter, and enjoy!

I added just a little bit of syrup for sweetness, but the blueberries do add a lot on there own.

So yummy, it's still making my mouth water.

This makes a total of 14 pancakes at only 172 calories for two. Delicious and low in calories! Plus I had plenty left to freeze and reheat for breakfasts later this week! Or you know, for lunch... or dinner. You can never have enough pancakes!

Baby Stuff :)

Be prepared for a pink overload tonight! While the main focus of my blog is based on living a healthy lifestyle, I can't help but have a post here and there regarding baby Larson. Only a few weeks left to go and we just had two baby showers last week, so the nursery is really coming together and I just have to share!

The ultimate theme of the room is just pink and gray. I have a few elephants here and there as well as a this whole bedding set of little pink birds. It's just too cute! Once the nursery is complete, I will post more pictures.

In the meantime, my friends Amanda, Jenny, and Chelsey managed to throw me an amazing shower this past weekend:

Last, but not least, I have to share a belly picture. These were taken a few days ago when I was at 32 weeks. I'm actually starting to lose track of how far along I am because it's getting easier to count down instead. So, in these pictures, I only have 8 more weeks to go before the due date!

*February Resolution*

February marks the beginning of my second resolution of the year: Organize, organize, organize! I have to admit, Cory and I are pretty organized people, but we have certain areas of our house that are... less than put together. (Namely my closet) :)

I'm using Pinterest to help me get some ideas on how to keep things accessible, yet functional. I'm all about efficiency!

Here would be my dream closet:

Sadly, I do not have an extra room in my house that I could selfishly turn into a closet, no matter how much I would love it.

So, here's more of what I have in mind for my (much smaller) closet:

Well, I do have the month ahead of me, so who knows what I'll come up with. :) All I know is that the nursery closet will be reorganized after the showers this month, and my closet certainly won't be far down the list. I think some of the drawers and cupboards in the kitchen could use some TLC, too. Looks to be a busy month!
