Sweet tooth

I have a sweet tooth. For those of you who know me well, this is an understatement. Red velvet cake with decadent cream cheese frosting, creamy chocolate and peanut butter cheesecake, warm snickerdoodle cookies... YUM! I just can't pass it up. And this weekend was my birthday so bring on the desserts! Here's a glimpse of what is sitting in my kitchen:

Looks delicious right? We have pumpkin cupcakes, (Which i definitely need to get the recipe for because these ROCK! Special shout out to my bestie, Amanda, for bringing these over!) a red velvet cupcake, funfetti cake with orange colored frosting, (Kudos, Mom!) and some chocolate/peanut butter cheesecake that I made as a treat for work. I need help eating all of this!

In the mean time, I have been working my butt off so I can enjoy these. :) Monday I completed a nice, slow, long run a few miles out in the counry, and this morning I cranked out 3 miles before finishing an ab workout. I really need to get a whole list of my daily workouts on this site, but here's a breakdown of what I did this morning:

- 3 mile run: I finished this a little under 30 minutes. I'm going to start cranking up my Tuesday 3 mile runs as I am planning on a Turkey Trot for Thanksgiving.
- 20 minute ab workout: I have a love/hate relationship with ab workouts. It hurts, but I feel great after I'm done!

Tomorrow I'm looking to get in a 5 mile interval run before work. Wish me luck! Now to enjoy a sweet treat before bed... :)

Sunrise workouts

Ok - I've officially decided that I need to let everyone know what happens in my world while the rest of you are still snuggled under the covers in the morning. This is a run-through of what happens on a typical Tuesday through Friday morning for me. I will let the pictures do the talking...




My routine actually starts the night before. I try to get my outfit together before I go to bed so it's one less thing to think about at 5AM. (P.S. I would be lost without the watch. It keeps me moving to make sure I get my entire workout in!)











Alright, this step might be the most important. It involves my favorite morning drink... COFFEE! (Cory lovingly calls this my "go juice" as I don't really get moving in the morning till I've had my cup of joe.) I usually set the timer on the coffee pot to start brewing about 15 minutes before I get up. It sounds silly, but the smell of coffee when my alarm goes off really does help me roll out of bed and shuffle toward the kitchen. Added bonus: The coffee is done by the time I get there!





Once I'm dressed and ready to go, I try to take a few minutes to drink my coffee and search the web. It gives me a second to collect my thoughts and get ready for the day ahead. My advice is to only take about 5 to 10 minutes. Any longer and it's possible to get distracted and talk yourself out of a workout.









My second suggestion is to drink plenty of water! I continue to chug water on the drive into town and while I am running on the treadmill.










Once I get home from the workout, it's time to quickly get ready for work and then... breakfast! This morning I chose to make my own. I microwaved some oatmeal (Bob's Red Mill, Whole Grain Oatmeal with Flax Seed to be exact) then added a little milk, a teaspoon of honey, a tablespoon of slivered almonds, and a sprinkle of cinnamon. Delicious! I also had a glass of milk for added dairy and protein. My favorite part is that this meal really kept me full until lunch time!



After breakfast, I'm ready to start the day, but not without my extra mug of coffee of course! In all seriousness though, the morning workouts give me so much more energy and it's refreshing to know that my entire workout is done for the day! Can't wait to see what tomorrow morning's workout has in store for me. :) Speaking of, it is past time for bed. More later!

I'm back!

Wow, it's been a while again. My apoligies to all of my avid followers. :)

While most everything in small-town USA has remained the same, I have made one major change - I now workout in the morning! That's right, while most people are snuggled in their beds welcoming another hour of sleep, I'm pounding the pavement (or treadmill as the case may be).

I have to say, this has been a huge challenge. A few weeks ago, I read a Runner's World article called "Rise and Run." It gave some wonderful tips on how to get the best out of an AM workout. My number one suggestion: COFFEE!

I can say that I've tried running in the morning before... here and there. I can count two times this summer when the weather was outrageously hot post-work, and a few times in my college life (usually after the first of the year when I wanted to "get healthy"). But I always felt sluggish and out of energy about halfway through my run. I was just completely conviced that I never got as much from my workout at 5AM as opposed to 5PM.

Lucky for me, the magazine article gave several tips on how to get prepared for the morning run and inspired me to get moving. And I am LOVING working out in the morning! I never realized how much time I have after work until I moved my gym time! I definitely suggest everyone give it at least one real try! And not a college try like I did. :)

Fall Weather = Soup Time!

It's now the middle of September and I can feel fall in the air! To me, the cooler weather means... soup! Before I left for work this morning I put together Chicken Tortilla soup and threw it in the crock pot on low. When I got home, I put a few tortilla chips in the bottom of our bowls:


Then I scooped soup over the chips:


And last, I added a little sprinkle of cheese, fresh cilantro, and a dab of sour cream:


Ta-da! So delicious and super easy! Makes a great combination. :)

In running news - I did not go today. Wah-wah. I got home and kind of got side tracked. And the weather was perfect this evening, too! But as I've learned in past experiences, it does no good to sit around and wallow. So after bowling league tomorrow (yes, bowling...), I will jump back on the horse! Or, the treadmill if you will. :) All for now!

Creativity

So, lately I've been really hooked on HGTV. If you don't believe me, I think my hubby could attest to my new found past-time. If he has to watch one more episode of Design Star, he'll probably divorce me. :) Just kidding! He secretly loves it, too. He just hasn't admitted it yet...

Anyway, the show has really gotten me in a creative mood. And, since Hobby Lobby is not open today and our town has limited shopping for interior decorating, I found a project that I could do at home this afternoon.

On another note, I downloaded some new music and took it with me for a five and a half mile run outside on Friday night after work. It felt great after the last weeks I've spent on the treadmill! I'm definitely ready for my workout tomorrow. :) All for now!

This Week

So much going on this week! Let's start with my Monday run. Only one word can be used to describe it: HILLS! I completely forgot that training on a treadmill omits any type of elevation changes. Another reason to hate the treadmill. I've decided to move outside at least one day a week.

Next stop: The local grocery store. My usual weekly trip involves grabbing a cart and motoring through the isles as fast as I can to grab everything on my list. This week, I decided to take a little extra time and see what the store has to offer. Check out a few things I found!



Can't wait to try it all out! :)

On Wednesday, I ended up at Whole Foods. When the doors opened, I think my jaw dropped. It was like a whole new world for me! Everything is so organized and out of everything I looked at, there were no weird ingredients. I knew what everything was in the loaf of bread and guacamole I brought home. And the best part... the store has a whole area sectioned off called, "Wine and Cheese." Delish!

After work today, I ventured over to Oakland's new Anytime Fitness gym and it was fabulous! My workout buddy, Amanda, and I were able to take go into a room and take a cycling class through video. It kicked my butt. :) But what a wonderful way to mix up a workout!

Tonight I am catching up on my TV shows, Design Star and What Not to Wear. And I will be relaxing drinking some wonderful Apple Cinnamon Tea.

Almost Monday

The weekend is drawing to a close and I'm already snuggled into bed watching a movie with the Hubby. :) Here's a short breakdown of how the weekend went:

First thing on the agenda Saturday? Coffee!


Next, we attempted the local Farmers Market here in West Point. Turns out we were both too late (we probably should have been there at about 8, but instead it was closer to 9) and we are later in the season for abundant produce. When we arrived, there was one little vehicle with a table. Not much to choose from. Not sure where I'm going to go from here.

Saturday night we stepped outside our box and went to dinner and bowling with a couple friends. It was actually really fun! Except that my right arm hurts today. :) And today we ventured to Grand Island to celebrate Cory's Grandma's 83rd birthday. It was great to see the family again!

All in all, it was a beautiful, well-rounded weekend. But tomorrow I am definitely ready to get back on the workout horse - and eating healthy. Too much junk food this weekend... yuck. With this in mind, bring on Monday!

-- Sweet Honey --

A few days ago I read an article in the September issue of Runner's World called "Honey Do." I bet you can guess what it was about: Honey! I love the sweet stuff myself. I'm even ok just eating it plain... straight out of the bottle. Yum. :)

Anyway, the article suggested using honey instead of sugar as a sweetener, so this is my new goal. It suggested swapping 3/4 cup of honey for every 1 cup of sugar required in recipes. I am going to need a lot of this natural nectar going forward...



The article also gave a quick salad dressing recipe including honey. I mixed it with my Romaine tonight and decided to add a few slivered almonds that I found in the cupboard.


Dinner is served! A homemade calzone and fresh cut watermelon completed the meal tonight.

Also, I would like to do a quick follow up on yesterday's post regarding eating orgainically. I posted on facebook that I was looking for some ideas, and I recieved quite a few! So I will be trying to shop more locally (we have a small farmer's market here on Saturday mornings), and I am going to try to stay away from boxed, high preservative food items. Also, to all of my Nebraska farming friends, I will still be eating meat! I could never give that up. :)

One last quick note here on my run today: 5 miles! I did an easy interval run which included 1 minute of a nice easy jog, and then 3 minutes at a 9:45 pace, followed by 2 minutes of recovery walking. I also squeezed in an arm workout and then headed home. Tomorrow I plan on a sprinting workout followed by a leg workout.

Luau + Cheese dip + Eating out = Upset stomach

This weekend was rockin... but it definitely wreaked havoc on my diet. If I have one food item that I just can not resist, it's a hamburger, nacho cheese dip. I love me some chips and cheese! My stomach, however, does not. I have spent most of the day trying to get back on track with eating fruits and veggies at every meal. And I didn't know what to do today when I actually felt hungry.

With this said, I have decided that I need to find a way to eat more organically and healthy overall. I would really like to get to Whole Foods in Omaha to just check it out. I love West Point, but neither of the small-town grocery stores carry organic foods. So I wold have to make weekly trips to Omaha or Fremont to accomplish this goals unless I get any other good ideas. I will update later on this one.

As far as 10K training is concerned, I am kind of just going with the flow. A while ago, I read an article regarding training that makes you faster. It includes different days of tempo running, sprinting intervals, an easy run, an easy interval run, and a long run. I am also including some strength training. With this combined, here's what I have so far:

- Monday: Tempo run and Ab workout
- Tuesday: Easy Interval run and Arm workout
- Wednesday or Thursday: Sprinting Intervals and Leg workout (off one day)
- Friday: An Easy Run and Ab workout
- Saturday : Off
- Sunday: Nice Long Run

My first 10k!

Today is your typical lazy Sunday afternoon. We don't have any plans and the couch in our living room has never been more inviting. It is the perfect day for napping... or signing up for your first 10k race! As you may have guessed, my dear husband chose the former while I have chosen the latter. I was really hoping to sign up for the Omaha Half Marathon, but with my recent running "break," I was afraid I wouldn't have enough time to train. Then yesterday it hit me. I don't have to do a half, I could just do the 10k.

In the midst of completing my registration, it occurred to me that I have done quite a few half marathons, but never a 10k. Seems odd doesn't it? I always liked to run, but when it came to my first race back in 2008, I decided to jump right in with a half marathon. And that is where I have stayed; for comfort reasons I suppose.

Anyway, I'm ready to try something new! And I'm really looking forward to this! I think I have found a training schedule, but I would like to keep searching to find the best one for me. I'll be posting that later. Right now it's time to update a few things on my page here.

Hiatus

Webster defines the word hiatus as: "an interruption in time or continuity." Synonyms include: breach, break, discontinuity, gulf, gap, hole, etc. With this in mind, to say I've been on hiatus from blogging would be an understatement. So much has happened since my last post! (Which was in April by the way. Yes, April! Tragic.) Maybe a bullet point list would be best in a situation like this:
  • My last name has now officially changed to Larson effective July 16th. We finally tied the knot! Best day of my life so far.
  • I've honeymooned in St. Thomas - This included multiple days of sleeping on a lounge chair by the ocean causing a sunburn/amazing tan. :) It also involved an amazing snorkeling trip... until I spotted a shark. Enough said.
  • I chopped my hair today! I'll post a few pics soon once I can figure out how to style it. 
  • I have successfully watched all 6 seasons of The Office in its entirety. 
  • And most importantly, I've gotten back into running!
Between planning the wedding, summer volleyball league, and keeping my house organized, I had put running on the back burner. But a friend of mine has recently acquired a free trial pass to Anytime Fitness here and town which has encouraged me to get back in action. Put me all the way up to four miles yesterday plus an ab workout! I'm still trying to figure out my workout plan, but once I have it put together, I'll be posting it. Hopefully not four months from now like my last hiatus. :)

Wedding Planning Trumps Blogging

I have sufficiently spent the last 2 nights purchasing gifts for the wedding online. This may sound simple, but I have yet to mention the amount of time it takes just to search for the perfect gifts and favors to purchase. On top of this, I have been writing Thank you notes until my hand cramps up and sending emails/making phone calls until my brain is numb.

While planning for a wedding really is fun at times, I have come to realize that with less than 3 months until the big day, planning for this event trumps blogging. It's a sad realization, but true. So, just as a head's up, my blogging may be few and far between until after July.

With that said, it's time for a running update! My event has expired on the right side of the page meaning I have officially completed my first race of the year! And it was a doozey. To be completely honest, I was planning on a much better race than what took place. The first half I really felt great... despite the heavy wind and cold temps. But I ran mile 7 in about 10 minutes, which is much faster than my normal pace leaving me with mixed feelings. I could either finish this race in record time, or I had pushed myself much too fast and I was going to be crawling across the finish line.

Unfortunately, the ladder of the two options took place. I still didn't finish with a bad personal time (about 2:33 which is normal for me), but I was really hoping to do so much better! This has really made me rethink my training plan and I will be looking for a new one soon...

Long time, No post...

Hello again! So I've been a terrible blogger lately... in case no one has noticed. But I'm back for another post!

Tonight I had a wonderful evening with my best friend, Amanda. There's nothing that a little catching-up and shopping can't fix! It's our chance to share current event's and  inspire each other to keep living a healthy lifestyle. After a while of going at it alone, you just need someone to vent to and encourage you. Plus I found the perfect dress!

Anyway, I really did need tonight because I have been a lazy piece this week. And I think Cory can vouch for that. The poor guy has hardly had any leftovers to take for lunch because I have barely been cooking. (Frozen pizza, anyone?) Probably no veggie this week, sadly. And my running has gone completely out the window. It's been a cold, rainy week and I have the race coming up this weekend so I have somehow convinced myself that I need to take it easy and that it's too gross to be outdoors.

In other news, I plan to sign up for the Omaha Half this week. I wanted to do it earlier, but again... lazy piece. I'm planning to run it with my other friend, Amanda, and I hope I can keep up with her! She is a great runner and much faster than myself. Luckily I have all summer to work on it so wish me luck. :)

Well, there are other things I can think of, but right now I think it's best that I make a list of everything that needs to be done since I have taken this week off from life. I plan to wake up with a fresh, positive outlook for the rest of the week... and maybe get a few things checked off my "to-do" list.

Cuke dip

I can't believe it's been so long since I've posted! It's crazy how time slips away...

Well for updates: I went for a wonderful walk tonight with my friend, Amanda. It's so much fun to walk with someone so the walks don't seem so boring! And it's a great, healthy way to catch up. (Plus it gets me off the gravel and into town.)

Also, I used cucumber for the first time last night! I know I said that it was last weeks veggie, but I just didn't have the time or supplies to make the recipes I wanted. So, this week's veggie is also cucumber! I made a veggie dip with sour cream, cucumber, dill, lemon juice, and a pinch of salt.



I decided to use light sour cream, but I would suggest actually using the real thing. It seems to have more flavor. Also, I could not locate fresh dill in either of our small grocery stores, so I had to use the dried seasoning.



All in all, it turned out pretty good! Not to mention it is very refreshing and perfect for this time of year. I brought it to work today and I think I will have some more with my lunch tomorrow, too.

And, as a side note, some of the flowers are starting to bloom in our back yard! I'm not quite sure what they are actually (any ideas?). But they sure do look pretty and they are yellow!





Well, I suppose that is enough for tonight. Time to shower, take a Benadryl (curse these blasted allergies), and head to bed.

.: Morning :.

Good morning! In case I haven't mentioned it before, I LOVE mornings. There's such a freshness as the sun peaks over the horizon. It feels like the whole world is just waking up and ready to start a new day. But the point is, I'm actually writing in the AM!

Anyway, couple of notes to pass along:

1. Planning on getting a run in tonight. It's been a couple of crazy busy days that have kept me away, but I'm really looking forward to another one. And, we are going to dinner tonight with a couple of our friends, who I am loving more and more every time we hang out! So glad we are catching up! Just reminds me how much I am blessed...

2. I have found my new favorite "there's no leftovers for lunch" lunch: Two pieces of whole wheat bread, toasted, with a skim of creamy peanut butter on top. Delish! Add a side of Greek Yogurt and I am set! It really keeps me full for hours, which is great because I hate getting hungry at 4. It's a little too early to eat dinner at that point.

Well, that's all for now. Time to head off to work and hope everyone has a fantastic weekend!

Wonderful run :)

Well everyone, it was 72 degrees here in wonderful Nebraska! This post is quite a bit different than the last as I did nothing but complain about the weather before. Once again, gotta love Spring-time in Nebraska. :)

But I rocked out 5 miles today and it was great! The weather was perfect, and I took a new route on some gravel roads, too. Note: I'm not a huge fan of this terrain. It's probably better for my knees, but there were a lot of white rocks that made for an uneven surface. My feet were happy to be back on the pavement for the last mile and a half.

Also, I forgot to mention that I found a fabulous website on Sunday! Allrecipes.com has everything. It took me about 30 seconds to create a log-in so that I could move recipes to my Recipe Box. And I get an email every day with a new recipe! I'm sure you will be seeing a lot of recipes from this site.

Nebraska Wind

It appears that there is a checklist of things that Nebraska must have every spring:

- Hail and snow in the same week
- Temperatures anywhere from 30 to 70 degrees
- Winds up to 40 miles per hour

The ladder is what got me today. I fully intended on running anywhere from 8 to 9 miles outside today. Didn't happen. I could say the wind was bad, but really the best way to describe it was: defeating. It definitely won over my efforts today. I did manage to eek out 5 miles outside, and then I promptly drove into town to run another 3 and a half on the treadmill. So regardless of the wind, I still did reach my goal! I just hope it's not windy like this when I run the Half on the 23rd.

If I'm being honest, however, I was not fully ready to run today. In fact, I was not excited about it in the least. I took last week off nearly all together and hadn't had a long run in almost two weeks. Plus I could tell the wind was picking up. After the 5th time of complaining to Cory that I didn't want to go, he said, "then don't go, but either way stop wining." At first I was really upset about what he said. Who is he to tell me to quit whining? Has he ever done an 8 mile run? But, after much thought, I understood his honest words. No one said I had to run today. So I either needed to run and be quiet, or choose not to go. And I'm so glad I did! I'll say this once... Cory was right! :)

In other news, I tried another asparagus recipe tonight and LOVED it!


It's called Grilled Asparagus Salad and I will definitely be taking the left overs with me for lunch tomorrow. The recipe is under my "Recipes" tab and I know I will be making it again. It would really make a great summer salad also.

Parmesan Asparagus

I finally tried out the asparagus last night! I found a recipe called Roasted Asparagus that I decided to try and I'm glad I did. It was pretty delicious, and my vegetable hater, Cory, actually had seconds! I'll be trying to post all of my creations under the Recipes tab of the site.

In other news, we are looking at nearly 60 degree weather tomorrow and some SUN finally! Looks like I'll be able to run outside again! Can't wait to get some fresh air.

Snow in March

I am feeling so much better today! I don't know if it's because I tried the old wife's tail of putting Vicks on the bottom of my feet before going to bed last night, or because I finally got to go for a run tonight. Probably a combination of the two (and, of course, I just got done watching The Biggest Loser).

Anywho, haven't gotten a chance to try the Asparagus yet. Planning on trying it tomorrow night. But the big winner of the day was... I finally went running again! I was aching to put on my running shoes. They have a way of staring at me from the closet floor begging to be used.

Sadly, the weather has not turned back toward spring just yet, though. I woke up this morning to a couple inches of snow on the ground. I realize that choosing the treadmill over pavement when the weather is under 40 degrees makes me a wuss in Nebraska, but such is life. I prefer to stay warm when running. :)

Regardless of the fact that I detest cold weather and am in dire need of some sunshine, I really couldn't keep from taking a couple pictures of the snowfall this morning. The way it laid sleepily on tree branches and barn doors made for gorgeous scenery.

Yummy vegetables

I have one word to describe the weekend: Sick. :( I really wanted to do my long run for the week this afternoon, but I decided that nursing my cold would probably be best. And running in snowy, 36 degree weather doesn't seem like it would help my cause. So tonight I am staying in, taking a hot shower, and am currently drinking some hot tea. Hope tomorrow will be better...

Also, I got to thinking this weekend that I don't eat near enough vegetables. And I know I haven't given some of these healthy foods a real chance. I've decided that I am going to pick a different vegetable every week and try a couple different recipes to see how it goes. My first week I have chosen:
Asparagus! Mmmm delicious, no? I do have at least one recipe in mind for this week, much to Cory's dismay. (He is NOT a vegetable fan, but I'm hoping he will entertain me and try my recipes anyway.) I'll be posting any recipes I find and I'm crossing my fingers that this will encourage me to eat more veggies!

Also, I can't seem to get a picture to publish with this post, so if anyone has any ideas, that would be great!

Sunrise

Ok, I wasn't going to make a post tonight, but I have to admit: I'm kind of addicted. :)

I have had a long, tiring day and to be honest, I think I'm getting a cold. But, in the midst of my complaining and feeling sorry for myself, I realized that.. LIFE. STILL. MOVES. ON. I can sit on this couch and feel sorry for myself all I want, but it doesn't help me stick to a goal I've made with my best friend (which I will get into another time) and it sure doesn't help me feel any better about myself.

So, what's the best thing about today? I will be heading to bed in a few minutes and it will soon be over. Which means tomorrow gives me another chance to do the things I should have done today. That's the most beautiful thing about a good night of sleep: When you wake up, God has blessed you with a new day, complete with a glowing sunrise!

With this said, I'm going to clean up a bit and head to bed with the knowledge that I get to start a new day in 8 peaceful hours!

Tuesday Love

Well here I sit on a Tuesday night watching my favorite show... The Biggest Loser! I can't figure out why I love this show so much. I swear it makes me cry every week! But I have to say, it really is an inspirational show. I can't even begin to count the minutes I spend during each day wining about such pidly things. Crazy.

Anyway, it's been a pretty crazy week at work and I'm feeling another build-up of things to do for the wedding so I haven't been that focused on running. Which is why I would like to share my awesome run from yesterday... 7.5 miles!! I realize this is barely over a 10k and I will be running an entire half marathon on April 23rd, but regardless, I still did it! And on a treadmill no less! I need to find something that can go on my wall showing a countdown to the race. I think it would definitley keep me movitated!

Anyway, I'm going to leave it short and sweet tonight and try to do some more maintenence on this site. Plus the show is still on and I need to know who is going home! And yes, I realize this makes me a nerd.

First Post!

Hello, everyone!
Perhaps I should begin my first blog by introducing myself: My name is Kris and I live near beautiful, West Point, Nebraska. While I have little experience with blogs, I have come to realize over the past couple of months that I would love to share my passion for running with others. And I would love any tips as well! I'm always a fan of trying something new.

While the main focus of this blog consists of the running experience, I would also like to share events and any other healthy living tips I discover along the way. Although exercise gets my heart pumping, I some how feel ten times better when it is combined with a wholesome lifestyle, complete with fruits and veggies!

Well, I suppose I will keep my first blog short as I am already feeling tired and ready for bed. Plus, I think this website needs a little more maintenance before I continue - It's definitely a work-in-progress. But I'm so excited to see what God has in store for me through this site!
